What Is A Microwave Egg MugMuffin?
It’s everything you want out of breakfast. Egg, muffin, cheese, scallions… all mixed up in a mug and then microwaved to perfection in no time at all. My Microwave Egg MugMuffin is a balanced breakfast packed with protein. You can even mix it up the night before and cook it off fresh in the morning.
It could not be easier, really!
How To Make My Egg MugMuffin
Your breakfast is about to be done in no time!

In a large microwave-safe mug mix together the flour, baking powder, baking soda, and salt.

Then, add in the wet ingredients — milk, oil, egg, cheese, and scallions and mix together.

Make a well in the batter and crack in your egg into the center.

Spoon the batter from the sides over the top of the egg.

Place in the microwave and cook for 50 seconds — 1 minute 10 seconds. you will know when it is cooked because it will be firm to the touch on top. (Cooking time is based on my 1200W microwave so your timing might vary.) Always keep a close eye on your mug while in the microwave so it doesn’t overflow or overcook.

Microwave Egg MugMuffin Recipe
Ingredients
- 5 tablespoons all-purpose flour
- ¼ teaspoon baking powder
- ⅛ teaspoon baking soda
- ⅛ teaspoon salt
- 2 tablespoons milk
- 2 teaspoons vegetable oil or melted butter
- 2 tablespoons egg
- 1 tablespoon grated cheddar cheese
- 1 tablespoon scallions chopped
- 1 small egg
Instructions
- In a large microwave-safe mug mix together the flour, baking powder, baking soda, and salt with a fork.
- Add in the milk, oil, egg, cheese, and scallions and mix together until just combined.
- Make a well in the center of the batter with a spoon and crack in your egg into the center.
- Spoon the batter from the sides over the top of the egg. It’s a little tricky but you’ll get it.
- Place in the microwave and cook for 50 seconds- 1 minute 10 seconds. you will know when it is cooked because it will be firm to the touch on top . Really not a fan of this one (and I really wanted to be!) I tried it twice… adding a little diced veggie dog. The flavour is good, but the muffin part was overcooked on the outside and the egg & dough in the center was undercooked… We choked half of it down and the rest went in the trash 🙁
Hi gemma im zainab and im 12 years old and i love baking the first time i ever tried a mug cake it was a disaster and there was realllyyy bad smell afterwards so im really hesitant to try any mug thing but all ur recipes look fantastic how can i resit im jaking this egg muffin tomorrow for breakfast my microvawe is a 700 watt microvawe so can u please adjust the time and tell me ? Perfect and tasty, my egg inside was slightly runny, used 1 min 18 secs at default power 100 (LG microwave), Enjoyed it, was very good, used a Corning Ware soup bowl

Hi Gemma! I just made this recipe, it was the perfect serving size, extremely easy to make and absolutely delicious! Instead of adding cheddar and scallions, I added sundried tomato, mozzarella, and basil.. love how versatile this recipe is! How can I make these recipes in oven?
I am a fairly new follower to your channel, and I’ve tried out some of your recipes (mainly the microwaveable snacks haha). I though I’d give this one a shot, my first problem was that the dough was too dry after adding the melted butter (I don’t have any vegetable oil). So I melted some more and it became wet enough for me to do the crater and add the egg in the middle.
